Recipe: Barbi’s Crockpot Beef and Broccoli Dinner

Crockpot Beef and Broccoli is great to put on the meal planner for the day after a roast. It can be made with leftover meat from a roast, chopped into bite sized pieces, or from uncooked meat. (Roasts are an economical way to feed your family, as the per pound prices are considerably lower than other cuts of meat.) Although beef is listed, other meats can be used as well.
This recipe is written for a crockpot. Crockpots save you time and energy; if you don’t have a slow cooker yet, it’s time to add one to your shopping list! Remember not to remove the lid of your crockpot during the day, not even to stir. Each time you lift the lid, 20 minutes must be added onto the cooking time to compensate for the lost heat.
Ingredients:
Small beef pieces (can be cooked or uncooked - leftover from a roast is perfect)

1 cup uncooked rice
2 cups of broccoli (fresh or frozen)
2 packs of brown gravy mix
3 cups water
1 teaspoon of minced garlic
Salt to taste

Directions:
1. Put beef and rice in crockpot first
2. In small bowl, stir together water and gravy mix. Make sure gravy mix is completely dissolved, then add salt and garlic. Pour mixture into crockpot.
3. Add broccoli to crockpot. (It’s alright if the broccoli is not covered by liquid.)
4. Set crockpot to high. For pre-cooked meat, cook for 4 hours, or until rice is tender. If starting with uncooked meat, cook for 6-8 hours.
